Lemon Chicken Soup + for baby

A really good summer soup, as nice other seasons, is this lemon tasting chicken soup. Think natural chicken broth, lemon, chicken and rice. Simple and marvellous. Suits well also for a baby. Our Eddie's already had two batches of this soup.

My Cypriot fathers chicken soup, or
Avgólemono:
  • A chicken
  • Bit more than 2 dl Uncle Ben's rice
  • 1-2 lemons
  • Salt, grinded white pepper
Put a whole chicken in a roomy casserole pan and let boil for 20 minutes. Add rice and let boild for another 20 minutes. For baby: Take a little of everything, add some rape oil, some lemon and mix to desired consistency. For adults: Season, press juice from a whole lemon, add salt until you sense the taste. Serve the chicken in nice pieces and have an extra lemon available for those who likes more.

Talking of soups, I'd like to try out this corn soup some day.

Mmmmmm...
