For about a month ago I made a favourite dish, that I've written about in the past, with autumnal zucchinis. It's possible to find these less pricey veggies year around in most grocery stores, however often a little larger in size. So when I have the chance I pinch the smaller thinner zucchinis, typically end of summer or beginning of autumn. I'm not fond of large onces though.

Normally this dish is served as one of many on the Cypriot dinner table, but we often eat it as main course. Nowadays also our kids love it. Especially our daugther dig the coca cola we always serve with it, cause this is a obligatoire possibly of nostalgical reasons. But in fact it goes truly nicely with this dish.

This dish takes some time partly becuase the preparation requires the zucchinis are sliced into thin half moons and partly because it's necessary to stir the pan now and then during the 45 minutes of frying/cooking that is required for the veggies to get the right softness. But it's worth the effort cause dispite the few ingredients of the finished dish the taste is crazily good.

Because of the amount of zucchinis two pans are requried in the beginning and about 1/2 dl olive oil in each pan. Something that significantly adds to the unique taste is to give the veggies an extra fry on highest temperature until parts of it's surface is brownish. It takes a while so be be extra attentive and stir often to avoid burning the whole thing.

Then it's time to lower the temperature one to two steps and cover with a lid so that the stuff is in fact cooking. Still it's necessary to stir every now and then, especially along the bottom surface of the pan. As the volume is reduced it can all be transfer to one pan. After the stuff been on the heat all in all about 45 mins, it needs to be seasoned with salt and pepper.

Last step is adding the eggs. Start by raising the temperature to maximum and possibly add some extra brownish colour to it. Finally the eggs are quickly added one by one by simultaneously stiring so eggs are spread evenly in the mixture avoiding coagulated lumps. The eggs mustn't become hard, but just precisely coagulated. Finished!

This September day we could sit outdoors on the balcony and enjoy the dinner, can't do that anymore. Kolokoudia me auga however is perfect year round, and quite cheap, so I constantly look for nice zucchinis that cost less than 19:90 Skr. In fact this dish is the one dish that most makes me feel vitalised or why not vitaminized.
